Stevia, as a new type of sweetener, can be widely used in various food, beverage, pharmaceutical, and daily chemical industries. It can be said that almost all sugar products can be replaced with stevia to partially replace sucrose or completely replace chemically synthesized sweeteners such as saccharin. Stevioside with a purity of over 80% is a white crystal or powder with low hygroscopicity. Easy to dissolve in water and ethanol, when mixed with sucrose, fructose, glucose, maltose, etc., not only does the stevia taste purer, but the sweetness can also be multiplied. This sugar has poor heat resistance, is not easily exposed to light, is stable within the pH range of 3-10, and is easy to store.
